Trehalose, CAS no.99-20-7 (anhydrous), CAS no.6138-23-4 (dihydrate), food sweetener, known as mycose or tremalose. Manufacturing process from starch. It is used as a flavoring agent, humectant, and skin-conditioning agent in personal care formulations. Propertity: white, crystalline solid and is easily soluble in cold water, used in food and cosmetics as a humecant. Trehalose is a non-reducing disaccharide consisting of two glucose molecules. Its mild sweetness (45% sucrose), low cariogenicity, low hygroscopicity, high freezing-point depression, high glass transition temperature and protein protection properties. Function:Trehalose has been shown to provide superior stabilization of proteins and biological systems, protecting against damage caused by desiccation or freezing. Uses: in Baking products, Chocolate and candy, Fruit, Quick-freezing products, Beverage, Fish and meat products.
