Non-GMO Soy Lecithin appears as a yellow to brown viscous liquid. Soy Lecithin is used as emulsifier, thickener, stabilizer, mild preservative, moisturizer. As an emulsifier, it prevents separation from occurring in products such as peanut butter, chocolate, ice cream, and margarine. It can also be used in the baking of bread to improve the texture and size.
