Sodium Carboxymethyl Cellulose, CMC, E466, CAS no. 9004-32-4, appears as a white to cream powder, and has a viscosity of approximately 5-12000 M.pas.(1% water solution, 25℃, Brookfield viscometer)  In food applications, CMC is a good emulsion stabilizer, thickener, and has excellent freeze, melt stability, can improve product flavor and prolong storage time. Function and uses: Thickening: CMC can produce high viscosity at low concentration.
